Senior Procurement Manager – Southern Europe

About the role

Plaza Premium Group is seeking a Senior Procurement Manager for Southern Europe. This hands‑on leadership position will turn procurement into a strategic performance lever, driving supplier value, food‑and‑beverage cost control, and disciplined purchasing across the region.

Key responsibilities

• Lead proactive procurement across Southern Europe, shifting from transactional buying to structured planning, supplier challenge and measurable value creation.
• Own food‑and‑beverage cost initiatives, challenging specifications, consumption patterns, portioning and waste to improve margin.
• Develop supplier partnerships that deliver quality, reliability, innovation and service‑level improvements beyond price.
• Negotiate contracts using benchmarks, volume data and business needs to enhance pricing, performance and accountability.
• Identify consolidation, new sourcing models or alternative products that add value without harming the guest experience.
• Use procurement as a business‑improvement function, simplifying processes, reducing complexity and supporting new lounge openings and commercial initiatives.

Required profile

• Senior‑level experience in procurement, preferably within hospitality or food‑and‑beverage environments.
• Strong analytical mindset with the ability to anticipate demand and challenge spend before it occurs.
• Excellent collaboration skills to work closely with Operations, Finance, Logistics and commercial teams.
• Proven track record of leading supplier negotiations and delivering cost‑saving initiatives.
