General Manager – Cantina (Madrid)

About the role

El Gordito is seeking an experienced General Manager to lead its all‑day cantina in Madrid. This full‑time, on‑site position will ensure smooth daily operations, high‑quality guest experiences, and profitable performance.

Key responsibilities

• Oversee opening and closing procedures, floor management and service flow across all shifts.
• Supervise, schedule and train a team of 50+ staff members, fostering an inclusive and collaborative environment.
• Manage inventory, coordinate with suppliers for food, coffee, natural wine and sake, and control costs to meet financial targets.
• Maintain quality, safety and hygiene standards, and promptly address guest feedback.
• Support marketing and promotional activities to drive business growth.

Required profile

• 10+ years of hospitality or restaurant management experience, preferably in a high‑volume, all‑day dining concept.
• Proven P&L ownership and ability to meet financial objectives.
• Strong leadership, people‑management and performance‑coaching skills.
• Excellent customer‑service mindset and calm issue resolution.
• Fluent English; Spanish or additional languages are a plus.
• Willingness to work flexible hours, including evenings, weekends and holidays.

Required skills

• Proficiency with restaurant technology tools such as Square, Tspoonlab and Slack.
