Head Waiter (Shipboard)

About the role

As a Shipboard Head Waiter you will support the Restaurant Manager in delivering high‑quality food and beverage service on a Viking cruise ship. You will lead a team of waitstaff, ensure guest satisfaction, and uphold Viking’s STAR Service Standards throughout each voyage.

Key responsibilities

• Plan, schedule and assign staff to sections, ensuring optimal coverage.
• Assist the Restaurant Manager with daily menu presentations and the execution of special shipboard events.
• Greet guests, monitor their experience, and address any special needs or allergies.
• Manage reservations and seating arrangements as directed.
• Coordinate with the Executive Chef, galley, and bar teams for seamless service.
• Conduct accurate monthly inventory counts and support durable order creation.
• Operate within set cost budgets, handle stock takes, and maintain pest‑management logs in line with public health policies.
• Provide regular performance updates to the Restaurant Manager and identify service improvement opportunities.
• Maintain immaculate cleanliness, enforce safety procedures, and ensure equipment is sanitized after each use.
• Inspect mise‑en‑place to be ready at least 15 minutes before service.

Required profile

• Minimum two years of experience in a hospitality or restaurant leadership role.
• Strong commitment to guest‑oriented service and the ability to motivate a team.
• Flexibility, stress resistance, and a focus on achieving operational goals.
• Excellent communication skills and the ability to work collaboratively with kitchen and bar staff.
